Yesterday went a bit more smoothly than Monday. I made sure to eat all of my snacks throughout the day despite not being hungry at all.
After my cheese snack, I had some carrots. I’ve started buying ten pound bags of carrots at Costco and each Sunday I’ll peel and cut up about 5 lbs of carrots that I’ll snack on throughout the week. This week I was really lazy and didn’t get a secondary veggie so I ended up with carrots two times a day.
That was then followed by some Fiber 1 cereal which was really filling. About a month ago, I was able to stock upon Fiber 1 cereal for less than $1 a box so I am still working my way through all of those boxes.
I had another bag of carrots after the Fiber 1 cereal. This time, though, I added in PB2. I think PB2 is now one of my new favorites… I mix it up at night and then through it in the fridge to eat with my carrots. I find that the PB2 just makes the carrots that much more delicious.
My next snack was one of my favorites, Fiber Gourmet crackers. I ordered a bunch of boxes of Fiber Gourmet crackers a few weeks ago and, unfortunately, they are no longer making my favorite kind – Nacho Spice. The original flavor is okay but I swear they changed the formula and the last time that I ordered them they were much better.
And, my final snack before the end of the day was a gnu bar. I was pretty excited that my latest order arrived on Monday so I was able to take a Blueberry Cobbler Bar in to work on Tuesday. I will admit, though, not my favorite. I far prefer the Cranberry Orange bar that I typically eat. This bar definitely reminded me of a Blueberry Cobbler but I guess I just don’t love them that much. I am eager to test the other new flavors!
At home, I snacked on an orange and a bag of popcorn before dinner. Sorry… no pictures of those!

I’ve been snacking on tons of carrots too as well as cucumbers that I cut up and store in the fridge. I’ve been trying to snack at least once between meals and then after dinner to help keep my metabolism up. It’s definitely helping. I also started making popcorn! I’m super excited about how easy it is to just pop a bug patch fresh from kernels on the stove. Throw some seasoning on it and it’s a really great low-cal snack!!
That should say ‘big batch’ not ‘bug patch’
