Quinoa Chili

Dinner last night was Quinoa Chili.  It actually turned out pretty well and we really liked it.

I took the recipe from Cooking Light and then adapted it a bit.  I omitted the oil from the recipe and instead of roasting the peppers, we just cut them up and added them in.  I didn’t have any paprika so that was omitted as well and it turned out that I didn’t have pinto beans so I used kidney beans.  Overall, we both really liked it … the recipe is quite light so while we are stretching this into two meals it could easily be one big one.

If I were to make this again, I think I’d definitely increase the liquids … perhaps more tomatoes, juice and water.  I’d also increase the amount of Quinoa to give it more bulk.

We ended up pairing the chili with a baked sweet potato.  I kinda wish that I had put the chili on top of the sweet potato but maybe I’ll try that on Thursday as we do have one more chili meal later this week.  Anyway… all in all … I would call this a success!

I ended up going to bed only about 30 minutes earlier than I did on Sunday as I just wasn’t feeling too tired but man let me tell you … I felt it this morning!  My goal tonight is to be in bed by 9 pm.

After struggling to get myself out of bed this morning, I hopped on the arc trainer and did my 120 minutes of cardio.  About halfway through, the TV froze and I ended up going without the TV or any entertainment for about 20 minutes… let me tell you… those were 20 long minutes.  Oh well, I survived and I ended up with a pretty good workout at the end of the day.

April 3 Workout

My goal for today is to be in bed by 9 pm.  I am going to make sure that dinner is ready early enough to make sure that happens.  Do you have a goal for today?  What changes will you make to ensure that you hit that goal?
