Eggplant Parmesan

Yesterday was a pretty uneventful day at work. Nothing too crazy or busy happening right now so I am able to get quite a bit done which is nice.

Adam and I met up on the train ride home and were able to walk home from the station together which was nice.  I think that the pollen is starting to get to me, though, so I am finding that time outside is not always fun.  My eyes are starting to water and my nose gets runny as soon as I spend a bit of time outdoors.  Hopefully this will pass soon.

Once we got home, I got started on dinner.  Last night’s dinner was supposed to be eggplant parmesan.  I am not a huge fan of eggplant but when we went to the farmer’s market last weekend, Adam picked one up and I decided to try it again.

I found a recipe on myrecipes.com (via Cooking Light) for eggplant parm and decided to try it.  It looked easy enough and it also wasn’t completely loaded with oil and bread the way many recipes are.  So, when I got home and started investigating the recipe a bit further I grew a bit more skeptical but decided to try it anyway.  Basically, the recipe called for roasting the eggplant in the oven until it was fairly soft and then topping it with chunks of canned tomato.

After topping the eggplant with the tomato, I was supposed to add bread crumbs and parmesan to the top and put the eggplant with the tomatoes back in the oven.  I was really nervous that they would stay together and thought I would end up with a  big mess as the eggplants were sliding around our broiling pan and almost slid out onto the floor so I decided to skip that part. Maybe this is why recipes always go wrong for me… Smile

Instead of adding the cheese and bread crumbs, I just plated the eggplant with the tomatoes on top and then added a bit of parmesan cheese but then I had a TON of leftover tomato juice from the tomatoes.  I just added that to the plate.  The whole thing ended up being incredibly soupy and reminded me a bit of the ratatouille that I had in college.  Perhaps next time, I will just try that!

Overall, it was okay but not something that I’d necessarily try again.  The eggplant did get soft but it was just WAY too much eggplant for me.  We each had half of the eggplant (I halved the recipe) but even half of an eggplant is more than I really want.

After we finished eating, we were both still hungry and hit up the pantry and fridge for some snacks.  I had some fruit and 2 english muffins. I definitely should have added some carbs in with the eggplant and that probably would have helped absorb some of our soupy tomato mixture.  Oh well… not a success but not really a failure.  Adam enjoyed it much more than me so that is at least good.

I know that my goal was to get to bed by 9 last night and, unfortunately, I didn’t quite make it but I was quite a bit earlier than the night before so this is progress my friends… progress.

I got up this am for my workout and my legs just felt a bit tired so I decided not to push myself too hard.  I really didn’t look at the heart rate monitor while exercising. I just went which was a nice change of pace.  I followed that by 30 minutes of weights.  I really need to change up the strength training and will be putting together a new plan for next week.

On tap for today… vegetarian enchiladas and hopefully cleaning our kitchen up a bit from all of this cooking that we’ve been doing.
